Here’s what you’ll need:

    • 250g all-purpose flour
    • 150g granulated sugar
    • 100g brown sugar
    • 115g unsalted butter, softened
    • 2 large eggs
    • 4 ripe bananas, mashed (about 400g)
    • 1 tsp vanilla extract
    • 1 tsp baking soda
    • 1/2 tsp salt
    • 1/2 tsp ground cinnamon
    • 1/4 tsp ground nutmeg (optional)
    • 60ml milk (or buttermilk for extra tang)

Preheat your oven to 175°C (350°F) and grease your loaf pan.
